Patatas Bravas with Classic Sauce
½ c. Real Mayonnaise
1 T. Lemon Juice
1 clove Garlic, minced
1 tsp. Spanish Paprika
Mix the sauce ingredients together in a bowl.
1.5 lbs. Petite Gold potatoes, cut into quarters
24 oz. Peanut or Safflower oil for frying
Garnish - Dried or fresh herbs such as parsley or chives for topping
Garnish - Salt
Fry potatoes in batches until crispy and golden. Toss with salt and herbs. Dip into sauce.
A fun idea is to make a 'Bravas Bar' for your guests. Fry up a few pounds of potatoes and serve to guests with a bevy of toppings such as: crumbled bacon, pulled pork, mushrooms sautéed in butter, green onion, chopped tomatoes, crumbled feta, chopped olives, pickled peppers, or anything your heart desires!
