​Simple Stuffing to Feed a Crowd

I love stuffing! No... I really, really love stuffing. Not the over-complicated food and wine magazine kind, but the earthy veggie-filled one I remember from my childhood. This recipe is just that, perfect for feeding 10-12 people and made with Funkwerks Raspberry Provincial Sour Ale which gives it richness and depth with a hint of fruit flavor.
Ingredients

1 (12 oz. bag) seasoned stuffing bread cubes

4 carrots, peeled and cut into small ¼ inch pieces.

4 ribs of celery, cut into small ¼ inch pieces

1 sweet yellow onion, cut into ¼ inch pieces

2 red apples, cut into ¼ inch pieces

¼ cup grapeseed oil

2 (11.2 oz.) Funkwerks Raspberry Provincial Beer (or you favorite craft brew)

​Directions
​

Preheat oven to 400^.

Place the seasoned bread crumbs into a large mixing bowl. Cut the veggies and apple.

Heat a large non-stick skillet and add the oil. Add in the cut veggies and apple. Sauté on high to med/high heat until the veggies are nicely caramelized, about 10 minutes.

Toss the veggies into the bowl with the breadcrumbs and mix well.

Add the two bottles of beer and mix until all of the breadcrumbs are evenly saturated.

Press the stuffing gently into a large baking dish or two smaller dishes. Bake for about 30^ minutes making sure the top and edges are nicely crispy.

​Serve with gobs of gravy!
