A beet smoothie your kids will beg for
When I pick my up my kids from camp or after school, they are usually upbeat and chattering about their day, but just as we enter the darkness of our garage they turn from normal kids to ravenous, angry zombies ready to eat anything that falls in their path.
What they really want is sugar!
I used to fall into the trap of letting them eat cereal when they came home, but recently I wised up and started feeding my "zombies" blood-red beet smoothies. They get instantly recharged and I feel I just packed their growing bodies full of nutrients. The smoothie is earthy and sweet with no beet flavor.
Stock up on the ingredients so you don’t run out and make a batch after school, as an anytime snack, or for breakfast. The recipe makes enough for parents, too.
1 (8-9 oz.) package of steamed beets with juice
2 c. frozen berries (I use a mix that has blueberries, blackberries and raspberries)
1 c. frozen cherries
1 c. Silk, pure coconut milk (Vanilla flavor)
1 c. Apple juice (make sure it says, “No sugar added”)
Blend on the highest setting of your bar blender.
Makes about 6 cups.
