
Salsa Straight from the Garden
The Garden Committee at my children's school was thrilled to have been able to make fresh garden salsa with 11 classes this harvest season! Our small volunteer committee strives to make our school garden a hands-on exploratory classroom for our students.
Kids picked veggies, tasted fresh beans from the pod, washed and munched on salsa ingredients that I buzzed up for them in the food processor! The classes loved it, with kids and teachers asking for the recipe.
Here is Chef Maggie's "Taste of Sunshine Salsa" recipe:
Puree the following ingredients in the food processor until smooth and serve with tortilla chips!
5-6 medium tomatoes
1 medium cucumber, roughly chopped
1 handful of beans picked out of their pods, pods discarded
1-2 green peppers, roughly chopped
Small handfuls of basil, cilantro, parsley
1 (15oz.can) Tomato Sauce
1/4 white onion
1 T. Honey
1 T. Lemon Juice
1 T. Seasoned Rice Vinegar
1 T. Frank's Hot Sauce
