Fresh Tomato Pasta Sauce
Tomato sauce from fresh ripe tomatoes is truly an elixir of the gods! Make a ton and freeze or can it and you'll be reminded of summer every time you use a batch. This recipe makes enough to feed six hungry people but can easily scale up - just blend in batches and simmer in a large pot.
I created this recipe to be so simple
12 medium sized ripe tomatoes
6 cloves of garlic, peeled
1/4 c. tomato paste
1/4 c. good olive oil
salt and pepper to taste
Puree all of the ingredients in a blender until well combined. You may have to do two batches depending on the size of your blender.
Transfer mixture to a large pot and simmer for 45 minutes to an hour, stirring occasionally.
Serve with your favorite pasta!
